Healthy Celery Soup Recipe

I came across this tasty vegetarian recipe whilst sat waiting to see the dentist one day. 

Having made it and adapted it slightly, here's my own version of this simple, low carb, low fat soup recipe:-

Ingredients

  • 1 onion - chopped 
  • 1 tbsp olive oil
  • 1 potato (diced)
  • 1 head of celery, diced
  • 1 bunch of flatleaf parsley, chopped
  • 1.5 litres of chicken stock
  • salt & pepper to taste

Method

  1. Fry the onions and potato in the olive oil
  2. Add the stock
  3. Add the celery
  4. Cover & simmer for 15-20 minutes
  5. Blend, adding parsley, reserving some to sprinkle on top of each bowl of soup
  6. Season with salt & pepper
  7. Serve hot with a small slice of crusty bread

This is a tasty recipe for summer eating, light and filling, with very few carbs or fat.

If you have any surplus vegetables from the garden, such as courgettes, peas or beans, you can throw in a handful with the celery to add extra goodness and flavor.
