Cheese & Vegetable Quiche
Recipe
This is tasty served
hot with new potatoes, but also great served cold with salad.
Making time 20 minutes
Cooking
time 40-45 minutes
Ingredients
Shortcrust pastry
(5oz plain flour, 4oz wholemeal flour, 4 ½ oz fat, pinch salt, 9tsp water)
1oz butter
1 small
onion
1 small red pepper
2 medium courgettes, thinly sliced
2
eggs
½ pint
milk
pinch of mustard
powder
1oz Parmesan cheese
salt and
pepper
v Fry
vegetables gently in butter until tender
v Put in
pastry case
v Mix and
beat remaining ingredients and pour into the pastry case
v Bake at
200
°C/400
°F/GM6 for 10
minutes
v Reduce
heat to 160
°C/325
°F/GM3 for a further
30-35 minutes
Any fresh vegetable
combination may be used.
Feel free to
add bacon – what about trying tuna or salmon?
