Healthy Chocolate Fudge Brownie Recipe

For best results, bake a batch of brownies the day or night before. 

These are the type of rich tasting brownies that will also make an excellent dessert, served simply with a cake fork, or with a dollop of creme fraiche.

This brownie recipe is also gluten free, perfect for anyone on a wheat free diet.

When fresh, they have a tendency to be very crumbly, but are perfect for eating the next day, if you can wait!

Ingredients

  • 50g dark chocolate
  • 100g butter or spread
  • 100g fructose sugar
  • 50g caster sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract or flavouring
  • 75g ground almonds
  • 2 level tsp baking powder
  • 125g roughly chopped pecans or walnuts
  • pinch of salt

Method

  1. Line tin with greaseproof paper or grease well
  2. Melt chocolate - either in a bowl over hot water or in the microwave (be careful not to burn)
  3. Cream butter and sugar.
  4. Add eggs, vanilla and chocolate
  5. Add almonds, baking powder, nuts and salt.
  6. Stir until all ingredients are well mixed in.
  7. Pour mixture into greased baking tin.
  8. Cook in oven, 180C, 350F for 30 minutes.
  9. Leave to cool.

Once cool, slice brownies and lift slices carefully out of tin.

Store securely in a tin and avoid movement as the brownies can be a little fragile - though extremely tasty !

Eat for morning coffee, afternoon tea or as a tasty treat for dessert.

These are also the perfect home made gift for friends, especially those on a gluten free diet !  Simply find something pretty to wrap them in, a cute tin or box, wrap nicely and tie with ribbons.
