Country Casserole Recipe
A firm family favourite, this meal is enjoyed by adults and kids alike.
Ingredients
- 1 lb potatoes
- 1 lb leeks
- 1 tbsp oil
- 1 x 1 ½ pint packet of oxtail soup
- 1 pint water
- ½ lb carrots
- 1 medium size onion
- 1 lb beef chipolate sausages
Instructions
- Peel potatoes, cut into half inch dice
- Scrape carrots, cut into sticks
- Cut leeks into ½ inch slices
- Peel and slice onion
- Fry sausages in oil
- Place in 3 pint casserole
- Lightly fry vegetables and add to sausages
- Prepare soup mix using 1 pint of water only
- Bring to boil and pour over casserole
- Cover casserole and cook for 1-1 ½ hours at 350 degrees F, 180 degrees C, or until vegetables are tender
Serve in a bowl together with crusty wholemeal bread
