Fruity Christmas Cookie Recipe

Christmas isn't complete without some festive holiday cookies !

Enjoy baking this with kids or for a surprise visit by friends - it takes just ten minutes in the oven.

Here's a diabetic-friendly and aromatic cookie recipe, full of spices, that's just right for the holiday season.

Recipe Ingredients

  • ½ cup oil
  • ½ cup brown or golden sugar
  • 1 medium egg
  • 1 ¼ cup wholemeal flour
  • ½ tsp baking powder
  • ¼ tsp ground allspice
  • ¼ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ cup milk
  • ½ cup chopped walnuts
  • ½ cup chopped dried apricots
  • ½ cup chopped dates
  • ½ cup raisins

Making the Cookies

  1. Preheat oven to 350F
  2. Mix the oil and sugar together
  3. Slowly add the egg
  4. Add other ingredients
  5. Drop spoonfuls on to oiled baking tray or baking sheet

Bake for ten minutes.

Cool & enjoy. 

If you manage to keep any, simply store in a dry tin.

Substitutions:- if you are short of any of these ingredients, you could replace walnuts with pecans, raisins with sultanas, sugar with fructose sugar, flour and baking powder with self raising wholemeal flour.
