Healthy Muffin Recipe Ideas
Used to thinking of muffins as a naughty indulgence? 
Here's some of our favorite muffin recipes which we've attempted to make as healthy as possible, with low levels
of sugar and fat and fewer carbs than usual.
Blueberry Muffin Recipe
With blueberries having the highest antioxidant capacity of any fresh fruit, it's also jam packed full of
Vitamin C. They've been shown in studies to combat heart disease, as well as acting as a natural anti depressant
and preserving vision.
No wonder that this is one of the favorite muffins for any family.
Ingredients
- 4 cups wholemeal (or whole wheat) flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1 tsp brewers yeast
- 1 tsp salt
- 1 cup milk
- ¼ cup oil
- 2 eggs
- 1 cup blueberries
- Mix together the flour, sugar and other dry ingredients
- Stir in milk a little at a time until mixture is firm
- Beat the eggs
- Stir in the eggs, oil & blueberrys
- Pour or spoon into muffin cases (makes approx 30-35)
- Bake in 400° oven for 25-30 minutes or until golden
- Cool on a rack

Banana Muffin Recipe
With bananas being easily available and one of the most popular fruits - this is a great recipe to make when you
have some overripe bananas, they are so full of flavor.
Bananas help to boost energy and contain serotonin, which is a mood enhancing hormone. They're also rich
in iron and potassium.
Ingredients
- 1 cup oatmeal
- 1 cup wholemeal flour (or try buckwheat for a different flavor)
- 2 eggs
- 3 bananas (preferably ripe)
- ½ cup sugar
- 1 tsp baking soda
- 1 tsp salt
- Mix flour & dry ingredients
- Mash bananas
- Mix bananas and eggs
- Stir bananas mixture into flour mix
- Spoon or pour into muffin cases
- Bake in a hot oven, 350°F, for 20-25 minutes
- Cool on a baking tray
Add a few dark chocolate chips for a special treat.
