Mixed Vegetable Pie recipe
This is a handy recipe if you've got a lot of vegetables in the fridge, but aren't sure what you can make with them.
It's also a handy meal to cook ahead and cook later in the oven (although you'll need to add around 10 minutes to the cooking time
for it to warm through thoroughly).

If you like you can
spice this up a little by adding a little chopped, cooked bacon.
For the vegetables,
you can use just about anything you've got in the fridge or larder, as long as the flavour
isn't very strong.
Choosing vegetables
which have a low glycemic index (GI)is far better as part of a diabetic diet, than higher GI foods.
