Salmon & Potato Wedges Bake

This is an easy to prepare healthy dish for anyone on a low fat diet. 

 

It's also bursting with health, with omega 3 oils in the salmon providing plenty of brain -boosting healthy goodness.

Ingredients

  • 500g new potatoes, cut into 1cm slices
  • 500g salmon fillets
  • 4 tbsp olive oil
  • bag of curly kale

Recipe

  1. Put the cut potatoes, mixed with 2 tbsp oil in a baking tray
  2. Pop in hot oven (220C) for 20 minutes
  3. Mix the kale and the rest of the oil together
  4. Put the kale mix on top of the part cooked potatoes
  5. Place the salmon fillets, skin up, on top of the potato and kale
  6. Return to the oven for a further 10 minutes

Do not allow the salmon to overcook.

Serve with chunks of fresh wholegrain bread or a fresh green salad.
