Sardine Patties - a hearty savoury breakfast recipe

Make these the night before you want to enjoy them for breakfast.

Ingredients

  • 125 tin sardines (drained & mashed)
  • 1 lb potatoes
  • 4 tbsp milk
  • 1 tbsp tomato puree
  • 1oz bran
  • 4 tbsp oil
  1. Cook and mash the potatoes
  2. Mix the sardines into the potatoes
  3. Add the tomato puree
  4. Form into round, flat cakes (should make 8) and coat with the bran mix
  5. Brush with oil

Grill on high for approximately 3 minutes each side.

Enjoy a hearty, healthy breakfast!

NB:- I've taken to using Extra Virgin Olive Oil in all my recipes instead of the Sunflower Oil I was using before. I haven't noticed any appreciable difference in taste and this should be an even healthier option.
