Sardine Patties - a hearty savoury breakfast recipe
Make these the night before you want to enjoy them for breakfast.
Ingredients
- 125 tin sardines (drained & mashed)
- 1 lb potatoes
- 4 tbsp milk
- 1 tbsp tomato puree
- 1oz bran
- 4 tbsp oil
- Cook and mash the potatoes
- Mix the sardines into the potatoes
- Add the tomato puree
- Form into round, flat cakes (should make 8) and coat with the bran mix
- Brush with oil
Grill on high for approximately 3 minutes each side.
Enjoy a hearty, healthy breakfast!
NB:- I've taken to using Extra Virgin Olive Oil in all my recipes instead of the Sunflower Oil I was using before. I haven't
noticed any appreciable difference in taste and this should be an even healthier option.
