Sheila's Cold Tea Fruit Loaf Recipe

We first tried this recipe before my daughter was diagnosed as a diabetic, but it's now a good cake to bake and keep.

Ingredients

  • 1 cup cold tea
  • 1/2 pounds raisins or currants
  • 4 oz soft brown sugar

Put these together and leave overnight

Next Day

Add one egg and 8 oz self raising flour (you may wish to try half s.r. white flour and half s.r. wholemeal flour)

Bake for one hour at gas mark 4 in a 2lb loaf tin

Leave at least one day before cutting for flavours to permeate .  Making a second batch will enable you to cut and freeze some for later.

The flavours are so full that you only need one small slice to enjoy with a nice cup of English tea!
