Spinach - more than a superfood for Popeye ?
Did you realise that spinach is one of the healthiest foods you can eat?
Unlike many of the other so-called superfoods, spinach is a readily available vegetable and is affordable in most countries of the world.
Spinach contains vitamins, minerals and phytonutrients and it's easy to add to the food in any meal, raw (for baby spinach) or cooked.
Surprisingly, nearly 50% of the caloric value of spinach comes from the plant proteins, which makes spinach a rich source of protein. Just one cup of spinach provides more than 10% of the recommended daily requirements of protein.
It's also one of nature's best sources of antioxidants which help the immune system fight infections.

Hot Potato Salad with Chicken & Spinach - another family favourite which is wonderful on a warm summers day. It's unusual in that it includes hot potatoes which just wilt the spinach, and it's wonderfully tasty.
Salad recipes - instead of your usual leaves, use baby spinach or add half baby spinach with your usual leaves (lettuce, rocket etc).
