Tasty Chicken Casserole Recipe

 

The addition of herbs and garlic create a healthy and tasty meal. 

 

Making time   15 minutes

Cooking time   40-45 minutes

 

Ingredients

100g 3 ½ oz smoked bacon, chopped

4 chicken pieces

1 large onion

2 cloves garlic, crushed

2 green pepper, seeded and chopped

2 tbsp fresh marjoram

1 400g can chopped tomatoes

150ml ¼ pint chicken stock

1 420g can borlotti beans or any tinned pulses, drained and rinsed

2 tbsps tomato puree

salt and freshly ground black pepper

 

 

v     Heat a large non-stick saucepan, add the bacon and fry for 2-3 mins

v     Remove from pan and add chicken and brown on each side

v     Add the onion, garlic and peppers and continue to fry for 2-3 mins

v     Return the bacon to the pan with remaining ingredients,

 v    Stir well, bring to the boil,

v    Cover and simmer gently for 40-45 mins

 

 Serve with vegetables and mashed potato
