Thai Curry Recipe                                                     

This is a simple, healthy and tasty recipe - suitable for diabetics.  This is a particular family favourite for when we have visitors as you can prepare the cause in advance and then cook the basmatic rice & reheat and add the vegetables

 

Making time   15 minutes

Cooking time   20 minutes

 

 

1 tbsp  oil

500g  cubed boneless chicken breast

2-3 tbsp thai curry paste

400ml reduced fat coconut milk

1 pack baby sweetcorn and peas

 

 

v     Heat oil in a saucepan

v     Add chicken breast for 4-5 minutes until browned

v     Add curry paste and cook for a further minute

v     Add coconut milk and vegetables, bring to the boil and simmer over a low to moderate heat for 15-20 minutes

v     Serve with basmati rice
